CITRUS FRUIT AND PEACH PICO DE GALLO SHRIMP

 Ingredients:
  • Shrimp 4
  • Limes 3 limes
  • Oranges 2 oranges
  • Grapefruit 1 grapefruit
  • Garlic 1 clove
  • Olive oil 2 soupspoons
  • Chicken broth 1 teaspoon
  • Canned peaches 1 peach
  • Onion 2 soupspoons
  • Cilantro 1 soupspoon
  • Diced tomatoes 3 soupspoons
  • Salt to taste
 Preparation:

Place shrimp in mixture of orange, grapefruit and lime juice (2 limes), crushed garlic and chicken broth for approximately 30 minutes. Put a bit of oil in a skillet and slightly cook shrimp on both sides. Chop remaining ingredients, season with salt and pepper. Place chopped ingredients in a stemmed glass and place shrimp on top. May also be served on a plate with a teaspoon of pico de gallo (chopped ingredients) on each shrimp.
